I love cornbread
I found this one that uses very little white flour - a little extra prep with all the ingredients but it's the best I've ever had.
1 1/2 cups yellow cornmeal
1/2 cup all-purpose flour
3 tablespoons sugar or maple syrup (or part sweet chili sauce)
1 1/2 teaspoon salt
¾ teaspoon baking soda
3 teaspoons baking powder
3 eggs, beaten
1 1/2 cups buttermilk (or use buttermilk powder with water as directed
1 small can (approximately 14 ounces) cream-style corn
1 finely chopped onion
1/2 chopped bell pepper (red and green both)
1 to 2 tablespoons finely chopped jalapeno pepper, optional(careful if you've used sweet chili sauce)
1/2 cup shredded Monterey Jack cheese (optional)
8-10 slices double smoked bacon, finely chopped
PREPARATION:
Cook bacon in large cast frying pan till almost done, add onions, pepper for just a minute or two. Do not drain. Pour some fat to grease baking pans.
In a large mixing bowl, combine dry ingredients. Stir well to blend.
In another bowl, combine the beaten eggs, buttermilk, bacon, corn, onion, chopped pepper(s), and shredded cheese. Blend into the dry ingredients until moistened. Pour into 2 greased 9-inch square baking pans or bake in the frying pan plus a 9 inch pan*.
Bake at 350° for 30 to 35 minutes, or until cornbread is browned.
*For a crispier crust, heat the greased pan before adding batter.
